Veggies, Veggies, and Veggies

It is the most wonderful time of the year! Well if you like fresh vegetables it is the most wonderful time of the year. The rain this spring has produced some wonderful produce that we have been enjoying. We have had four or five gifts of yellow squash and have eaten it fried, sautéed, and roasted. We had a lovely salad with cucumbers, carrots, and onions from my Mother's garden in Easley. Last night we had  a completely homegrown meal. The pork chops came from my mother's farm along with the green beans and potatoes that we cooked together. One of our church members called and brought by twenty ears of corn that had just been picked. We simply boiled half of them and served with butter, salt, and pepper. I am still picking corn out of my teeth, but it is a good thing.  We also had some more yellow squash that came from the BBQ Connoisseur. It has been marvelous to say the least. Tonight we will be having vegetable (homegrown squash, zucchini, and broccoli) stir-fry over rice and maybe some pot-stickers or dumplings.

Don't fret if you do not have a garden or are blessed like I am to have many friends, church members, and a hard working mother who gives you veggies from their abundance. There are many farmer's markets and roadside stands that you need to check out. The New State Farmers Market is really good from what I hear. There is a road trip being planned to Columbia in the near future.

 I want to urge you to not eat frozen or canned veggies for a few weeks. You really need to get out and see the fresh veggies that are in season now. It is truly amazing the difference fresh ripe produce makes.
